Deviled Ham Terrine

Time: Hands-on Time: 20 min.; Total Time: 8 hr., 50 min.
Ingredients:
- 1 1/2 pounds smoked ham, coarsely chopped (about 4 cups)
- 1/2 cup finely chopped fresh parsley
- 1/2 cup mayonnaise
- 6 tablespoons butter, softened
- 1/4 cup whole-grain Dijon mustard
- 3 tablespoons dry white wine
- 1 celery rib, finely chopped
- 2 green onions, finely chopped
- 1 teaspoon lemon zest
- 3/4 teaspoon black pepper
- 1/4 teaspoon ground red pepper
- Crackers
- Winter Pickled Veggies
- Garnish: sliced pickled okra
Directions:
- Pulse ham, in batches, in a food processor 4 to 6 times or until shredded. (Do not overprocess.)
- Stir together parsley and next 9 ingredients.
- Stir in ham until well blended.
- Line a 5-cup serving piece or two (2 1/2-cup) serving pieces with plastic wrap, spoon in deviled ham.
- Cover and chill 8 hours.
- Store in an airtight container in refrigerator up to 3 days.
- To serve, unmold it onto a serving plate
- Let stand at room temperature 30 minutes before serving.
- Serve with crackers and Winter Pickled Veggies.
